Making cheese in the classroom

Kaas maken in de klas

Esther has developed a practical lesson “making cheese”, in which she takes students through the cheese technology process.

She does this from her passion and profession as a cheese maker and food technologist. Esther takes the students from the beginning to the end of the cheese process, in both practice and theory.

At the end of the lesson, the students take home their own cheese. They receive a matching cheese box with all materials to properly care for the cheese.

Who is it suitable for?

The lessons can be tailored to any level and are therefore suitable for secondary education, MBO and HBO. The lesson can be perfectly combined with a theoretical framework provided by the school itself. For example a module production development, dairy or cheese. The theory lessons can, if desired, also be provided by Esther.

Because of Esther’s experience with young people and young adults as a youth worker, she easily responds to the atmosphere in the group and involves all students in the technological substantive process.

What does a lesson look like?

The lesson starts with the milk. The students fill their own cheese tub themselves. This allows them to see the milk turn into cheese right in front of their eyes. The students are taken through the cheese process step by step: from the milk to the end product, the cheese. There is plenty of room for questions in between.

At the end of the lesson, the students take home their own cheese. They receive a matching cheese box with all materials to properly care for the cheese. It contains materials like salt for brining, coating, coating sponge, cheese paper and a cheese board to ripen the cheese. The box also contains clear instructions on how to further treat the cheese at home.

After the lesson, it is possible to continue to ask questions to the cheese maker about the process. It’s free of charge.

Practical information

Location

The lesson requires a practically furnished classroom with a hand-washing facility, power supplies for the (small) boilers and a working surface. For example: a practical classroom with kitchen and / or food production facilities.

Materials

Esther takes all necessary materials to the location.

Time

The lesson lasts about 4-5 hours, depending on the wishes. This makes it possible to have two groups follow the lesson on one day.

Combination

It is possible to combine the cheese class with a butter class. Ask Esther for the possibilities. There is a nice package price for a combination with the butter lesson.
